Above, a grove of ramps. Spring has spring upon us here in Vermont, early at that. I went out looking for ramps this afternoon and hit the jackpot. I harvested a small bunch, and will most certainly go back out and harvest a ton! I am plotting and scheming how I will cook with them: frittata, tartlets, soup, pickled... I could not believe what else I saw out in the woods: trout lilies and trillium. Both of which are just about to start blooming. I can not get over the jump start we have had this season.
